Goat cheese salad with mango and avocado | Bettine
Goat cheese and fruit are a delicious combination, which is why we have this recipe for you with mango. This is a well-filled salad for lunch or as a side dish at dinner.

|100 g||of rocket|
|125 g||of Bettine goat’s cheese|
|40 g||of almonds|
|100 g||of black beans|
|2 stalks||of spring onion|
|4 tbsp||olive oil|
|2 tbsp||white wine vinegar|
|salt and pepper - to taste|
- Divide the arugula between 2 plates.
- Dice the mango, pepper and avocado and drain the black beans well in a colander. Cut the spring onion into rings.
- Divide the mango, avocado, pepper and black beans over the salad. Top with the slices of goat cheese and garnish with the spring onion and walnuts.
- In a small bowl, mix well the olive oil, white wine vinegar and a pinch of salt and pepper. Drizzle this over the salad.
