Goat cheese salad with mango and avocado

Goat cheese and fruit are a delicious combination, which is why we have this recipe for you with mango. This is a well-filled salad for lunch or as a side dish at dinner.

for 2 people
100 g of rocket
1 mango
125 g of Bettine goat’s cheese
1 avocado
40 g of almonds
100 g of black beans
1 bell pepper
2 stalks of spring onion
4 tbsp olive oil
2 tbsp white wine vinegar
salt and pepper - to taste


    1. Divide the arugula between 2 plates.
    2. Dice the mango, pepper and avocado and drain the black beans well in a colander. Cut the spring onion into rings.
    3. Divide the mango, avocado, pepper and black beans over the salad. Top with the slices of goat cheese and garnish with the spring onion and walnuts.
    4. In a small bowl, mix well the olive oil, white wine vinegar and a pinch of salt and pepper. Drizzle this over the salad.
